Chablis, Domaine Dampt, Burgundy, 2018
Domaine Daniel Dampt is one of the most well-regarded Chablis producers, creating wines of exceptional purity and freshness. Chablis is 100% Chardonnay grown on soils with fossilized shellfish. Because of that, the wine is a perfect pairing for oysters. Fresh lemon and green apple, an elegant minerality, with a lively finish. Fresh, elegant and concentrated. Drink now and over the next 4 years. (Source)

Santa Margherita Pinot Grigio (2020)
With neither rhetoric, nor false modesty, the Santa Margherita philosophy – established by Gaetano Marzotto himself – has always been to respond to the needs of our own community (grape suppliers, staff, partners, clients) by offering the maximum quality. (Source)
Santa Margherita was the first company to vinify pink Pinot Grigio grapes as a white wine. In this process, the must does not remain in contact with the skins, from which it would otherwise take on the rusty color. Following a soft pressing, the must ferments for 10-15 days at 18° C (64°). Once the fermentation is over, the wine is stored at a controlled temperature of 15 – 16° C (59 – 61° F) in stainless steel tanks until it is time to bottle. (Source)
Vintages releases thousands of wines each year, and this is consistently a top seller. It put Pinot Grigio on the map with its refreshing quince, nuts, yellow pear and fresh pastry notes. A favourite with a plate of antipasti, grilled chicken or seafood salad. (Source)
